Warm up this Halloween with a simple pumpkin soup! Perfect for using up the flesh from your carved pumpkins.
Ingredients:
- 1 medium pumpkin (peeled, deseeded, and chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 carrots (chopped)
- 1 litre vegetable stock
- 200ml coconut milk or single cream
- 2 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- Pumpkin seeds for garnish (optional)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until softened (about 5 minutes).
- Add the chopped pumpkin, carrots, and cumin. Stir for a couple of minutes to coat the vegetables in the spices.
- Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the pumpkin and carrots are soft.
- Blend the soup with a hand blender until smooth. Stir in the coconut milk or cream and season with salt and pepper.
- Garnish with roasted pumpkin seeds if desired and serve hot with crusty bread.
