The perfect pumpkin soup recipe for Halloween

Warm up this Halloween with a simple pumpkin soup! Perfect for using up the flesh from your carved pumpkins.

Ingredients:

  • 1 medium pumpkin (peeled, deseeded, and chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 carrots (chopped)
  • 1 litre vegetable stock
  • 200ml coconut milk or single cream
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Pumpkin seeds for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and cook until softened (about 5 minutes).
  2. Add the chopped pumpkin, carrots, and cumin. Stir for a couple of minutes to coat the vegetables in the spices.
  3. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the pumpkin and carrots are soft.
  4. Blend the soup with a hand blender until smooth. Stir in the coconut milk or cream and season with salt and pepper.
  5. Garnish with roasted pumpkin seeds if desired and serve hot with crusty bread.
